I see sun peaking through the clouds...time for a quick walk! This is one way to add a few extra steps in my day. I was glad I added some extra steps to because they can add up.

Recently my Dad showed up out of the blue and took me to lunch. It was very enjoyable time with my parents.
They were ordering dinner and I decided to do the same even though I wasn’t real hungry (I love left overs). There was this great Hawaiian chicken on the menu. I like how they make it with a slice of ham and cheese and grilled pineapple on top. I ate the salad and a bit of the Hawaiian chicken and the rest came home with me. I wanted to cook my Honey dinner and use the left over from lunch with my parents and scrambled egg from breakfast up so I came up with a simple plan and it was a winner for both of us. I think it’ll be easy to recreate even without left overs, especially if I have cooked chicken in the freezer.
It was fun to be creative, use up my left overs and it gave me a new recipe too.

There was a time I loved to cook. I took pride in making things from scratch and enjoying eating them. Over time it became more of a chore that needed to be done. I learned to do things that made it easier.
I used to make big batches of dishes I loved and freeze a bunch of servings. It made it easy to heat things up for people and I didn’t need to cook 2 – 3 different meals. Now, I’ll make enough for a few left overs possibly one goes in the freezer. One thing that makes it easier for me to cook and saves me a bit of money is when I grocery shop I pick up lean beef and chicken that is close to date and marked down. I cook it up that day and let it cool and freeze it in serving sized that work for my cooking. When I want to cook something up a few steps are done because I don’t need to pick up and cook the meat.

I had a craving for comfort food like stew or soup although I wanted it to be in the reasonably healthy range too.
I saw a recipe for Crock-Pot taco soup and that really sounded good. I looked over the ingredients and made some quick tweaks. I’m not into spicy food; in fact I can be a real wimp in the heat department, LOL. Used a very small Crock- Pot (1.5 quart). It was delightful comfort food for me and it was reasonably healthy. There was enough for four servings too.
I love it when thing turns out great! It’s easy, reasonably healthy comfort food and I’d make it again. I even got a complement or two.
